Red clover is a low-growing, flowering plant commonly found in fields, meadows and other undisturbed grounds. Like many other members of the legume family, red clover contains isoflavones and coumarin compounds, the latter of which are partly responsible for the sweet taste of the flower tops. Red Clover blossoms can be used in salads and teas.

Red Clover Lemonade
3 cups red clover blossoms
4 cups water
1 cup lemon juice
8 tbsp. raw honey
Boil the blossoms in the water for 5 minutes.
Strain and then add the lemon juice and honey to the hot liquid. Stir until the honey is well mixed. Chill for a couple hours and serve over ice and enjoy.
